Description
This Food as Medicine course session provides an evidence-based review of dietary patterns, food groups, and nutrition strategies for treatment and risk reduction of common chronic diseases, including cardiovascular disease, insulin resistance and type 2 diabetes, obesity, and select cancers. Participants will strengthen their understanding of nutrition science as it applies to clinical care, including the roles of carbohydrates, fats, and proteins in health outcomes, while developing practical skills for supporting meaningful dietary behavior change. Through real-world clinical case studies and a focus on patient-centered counseling and practice implementation, learners will build the knowledge, skills, and confidence to treat and reduce the risk of chronic disease across healthcare settings.

The Food as Medicine: Nutrition for Treatment and Risk Reduction course consists of 1 module lecture and 2 hours of content.

Target Audience
This course is applicable for interprofessional healthcare team including physicians, registered nurses, nurse practitioners, physician associates, registered dietitians, physical therapists, occupational therapists, pharmacists, other health professionals working with chronic disease prevention or treatment, certified health coaches, and clinicians in training.
Learning Objectives
By the end of this course, participants will be able to:
- Describe dietary patterns that have been shown to be effective in the treatment and risk reduction of common lifestyle-related chronic diseases
- Discuss how diet behaviors impact chronic disease development and progression
- Identify ways in which different macronutrient sources may contribute to disease progression or improvement
- Explore basic strategies to support dietary behavior change
