
Food as Medicine for Type 2 Diabetes Remission
This Food as Medicine course session offers a comprehensive exploration of how food can be utilized as medicine in the treatment, and potential remission of type 2 diabetes and reversal of insulin resistance. Through a combination of didactic lecture and case studies, participants will delve into the efficacy and clinical application of commonly used clinical guidelines as well as review nutrition therapy practices and strategies. Furthermore, the course reviews how the food as medicine dosing intensity impacts clinical outcomes and medication deprescription needs for patients with type 2 diabetes and insulin resistance.

This course consists of 1 module and 3 hours of content.
Target Audience
This course is applicable for interprofessional healthcare team including physicians, registered nurses, nurse practitioners, physician associates, registered dietitians, physical therapists, occupational therapists, pharmacists, other health professionals working with chronic disease prevention or treatment, certified health coaches, and clinicians in training.
Learning Objectives
By the end of this course, participants will be able to:
- Review commonly utilized clinical guidelines and nutrition therapy practices for diabetes.
- Describe evidence that nutrition therapy is an effective strategy for the treatment of insulin resistance and type 2 diabetes, sometimes resulting in complete remission of the disease.
- Discuss nutrition guidelines for treatment and remission of type 2 diabetes and reversal of insulin resistance.
- Discuss the role of medication deprescription.
- Explore application of food as medicine for treatment and remission of type 2 diabetes and insulin resistance.
Arti Thangudu, MD, DipABLM
Dr. Arti Thangudu is a highly skilled, triple board-certified physician who specializes in Endocrinology, Diabetes and Metabolism. She is a passionate patient advocate. She believes her duty is to provide patient-centered care with a strong doctor-patient relationship. Her practice blends her medical expertise with optimization of lifestyle to achieve health for her patients who suffer with obesity, diabetes, thyroid problems, high cholesterol, high blood pressure and other metabolic and hormonal disorders.
Dr. Thangudu’s commitment to better care, relationships and outcomes in endocrinology led her to found two healthcare companies. Her first, Complete Medicine, is a direct specialty care clinic in endocrinology. She then launched HeyHealthy, an outcomes driven company that helps self-insured businesses who want to save money and time on employee healthcare by providing accessible, supportive diabetes and hormonal care to employees so they can be healthy, stay out of the hospital and have renewed energy and productivity
Dr. Thangudu’s bachelor’s degree is in Journalism from Northwestern University, she received her MD from UT Health Science Center in San Antonio, completed her internship in Internal Medicine at Baylor College of Medicine, residency in Internal Medicine at Tulane University School of Medicine and fellowship in Endocrinology, Diabetes and Metabolism at the University of Pittsburgh Medical Center. She is board certified in Internal Medicine; Endocrinology, Diabetes and Metabolism and Lifestyle Medicine - a field that focuses on maximizing our health through nutrition, exercise, stress management, emotional and mental well-being, sleep and cessation of unhealthy habits.
Dr. Thangudu worked in one of the busiest endocrinology practices in the nation after her training where she learned about the traditional healthcare system before she ventured into physician entrepreneurship.
Dr. Thangudu is married to an ICU physician and adores being mama to an eight-year-old girl and six-year-old boy.
Brenda Davis, RD
Brenda Davis, registered dietitian, is a plant-based trailblazer and an internationally acclaimed speaker. Brenda has been a featured speaker at medical, nutrition, and dietetic conferences in 25 countries on 6 continents. As a prolific nutrition writer, Brenda has authored/co-authored 13 books with nearly a million copies in print in 15 languages. Her most recent works include Plant-Powered Protein (2023), Nourish: The Definitive Plant-based Nutrition Guide for Families (2020), Kick Diabetes Essentials (2019), The Kick Diabetes Cookbook (2018), Becoming Vegan: Comprehensive Edition (2014) and Becoming Vegan: Express Edition (2013). Brenda has also authored and co-authored numerous peer-reviewed journal articles and is a past chair of the Vegetarian Nutrition Dietetic Practice Group of the Academy of Nutrition and Dietetics. She was the lead dietitian in a diabetes randomized controlled trial in the Marshall Islands. Brenda was the 7th recipient of the Plantrician Project’s Luminary Award in 2022. She lives in Calgary, Alberta, Canada.
